Mutton Biryani

Serves 4

Ingredients:
  1. Mutton 1kg
  2. Basmati Rice ½ kg
  3. Yogurt 1 cup
  4. Hanson Fried Onions half cup
  5. Oil as required
  6. Hanson Ginger Garlic Paste 2 tbsp
  7. Cinnamon 3 sticks
  8. Bay leafs 3
  9. Cumin seeds 2 tsp
  10. Black pepper 1 tsp
  11. Nutmeg ½
  12. Green cardamom 5-6
  13. Black cardamom 3-4
  14. Cloves 5-6
  15. Chili whole 2-3
  16. Green chilies 2-3
  17. Fresh coriander ¼ bunch
  18. Hanson Mint Chutney 2 tsp
  19. Kewra Water 1 tsp
  20. Saffron 12-14 strands

 

Method:
  • Marinate the mutton with Hanson Fried Onion (make it crushed), Hanson Ginger garlic paste, yoghurt, salt to taste, chopped coriander and Hanson Mint chutney and the dried grinded garam masala (cumin, cinnamon ,black pepper chilli ,nutmeg, both cardamoms, cloves, bayleaf).
  • Leave it in marination for nearly 1 hr.
  • Put marinated mutton in a deep pan and cook till meat is tender and the gravy is thick. Add little water if desired.
  • When the mutton is nearly done, add whole green chilies and mix well.
  • Soak basmati rice in water for 1/2 an hour and boil with water salt, bayleaf, cumin and green cardamoms (2-3).when almost done strain in a colander.
  • In a skillet make a layer of rice the other layer of mutton with gravy again make a layer of rice and again mutton.
  • Sprinkle kewra water (dissolved with saffron) over the rice and cover the lid of the pot.
  • Cook on low heat on top of tawa till the rice is done. Serve with raita or any other thing you desired.
